How to Make Chả Quế (Traditional & Healthy Version)
Chả Quế, or Vietnamese Cinnamon Pork Sausage, is a beloved snack from Northern Vietnam celebrated for its aromatic, slightly spiced flavor and firm, springy texture. This specialty is often enjoyed as part of bánh mì sandwiches, on festive platters, or served with rice noodles (bún). The name 'Chả Quế' literally means 'cinnamon sausage', referencing the fragrant Saigon cinnamon (quế) that infuses the pork with a distinctive aroma unique to this dish. Traditionally, Chả Quế is made by finely grinding lean pork with a blend of fish sauce, garlic, and a generous hint of cinnamon. The mixture is then wrapped and steamed or baked, resulting in a golden outer layer and a succulent interior. This healthy version uses lean pork and less oil, making it an ideal snack or protein-rich side for calorie-conscious eaters. Whether served warm or at room temperature, Chả Quế offers a taste of Hanoi's streets and the warmth of Vietnamese hospitality. It's a versatile, protein-packed treat that's gaining popularity worldwide for its unique flavor and nutritional balance.
Ingredients(for Approximately 100g slice per serving)
- 250g Lean pork shoulder (Thịt heo nạc vai, trimmed of visible fat)
- 1.5 tbsp Fish sauce (Nước mắm)
- 1 tsp Saigon cinnamon powder (Bột quế)
- 1/2 tsp Sugar (Đường)
- 1/4 tsp Ground black pepper (Tiêu đen)
- 1 clove Garlic (Minced (Tỏi băm))
- 1 tbsp Cornstarch (Bột bắp, for binding)
- 1 Egg white (Trứng gà, helps with texture)
- 1 tsp Vegetable oil (For brushing) - optional
- 1/4 tsp Baking powder (Optional, for extra springiness) - optional
Instructions
- 1
Slice pork into small cubes and freeze for 30 minutes until firm but not frozen solid. This helps achieve a smoother paste.
5 minutes
Do not over-freeze, as it may damage texture.
- 2
Place the chilled pork, minced garlic, fish sauce, sugar, cinnamon powder, black pepper, egg white, cornstarch, and baking powder (if using) into a food processor. Blend until a very smooth, sticky paste forms.
5 minutes
Process in short pulses to avoid overheating the meat.
- 3
Transfer the mixture onto a sheet of parchment paper. Shape into a log about 15cm long and 4cm thick. Roll tightly, twisting the ends to secure.
3 minutes
Use wet hands to prevent sticking when shaping.
- 4
Steam the pork log over boiling water for 15 minutes until firm and cooked through.
15 minutes
Ensure the steamer lid is wrapped in a towel to prevent water from dripping onto the sausage.
Why This Dish is Healthy
This healthy Chả Quế recipe uses lean pork and minimal oil, making it lower in fat and calories compared to traditional versions. Baking instead of deep-frying further reduces added fats.
